New Year’s Eve parties not only bring family and friends together to see out the old year but also it’s a time to celebrate the coming year, perhaps in anticipation of a better one than the last. The younger generation tends to celebrate a little more boisterously, with fireworks and horns, but both young and old find common ground on the fun food served at New Year’s Eve parties.
There is such a great variety of appetizers to choose from it’s easy to find something to appeal to every palate. One popular and tasty standby is a big bowl of nachos. The following recipe can be varied to suit every nacho lover out there and is almost a meal in itself. Happy New Year!
DELUXE FAJITA NACHOS
2 1/2 cups shredded, cooked chicken
1 (1.27-ounce) package fajita seasoning
1/3 cup water
8 ounces tortilla chips
1 1/4 cups (5 ounces) grated cheddar cheese
1 cup (4 ounces) grated Monterey Jack cheese
1 large tomato, chopped
1 (2 1/4-ounce) can sliced ripe olives, drained
1/4 cup sliced green onions
Salsa
In medium skillet, combine chicken, fajita seasoning and water; blend well. Bring to a boil; reduce heat and simmer 3 minutes. In large shallow ovenproof platter, arrange chips. Top with chicken and cheeses. Place under broiler to melt cheese. Top with tomato, olives, green onions and desired amount of salsa. Makes 4 appetizers or 2 main-dish servings. Can be served with guacamole or sour cream.
Note: For a spicier version, add a few sliced jalapenos. Also, 1 1/4 pound cooked ground beef can be used in place of shredded chicken.
