Before the Lenten season nears the end, you might like to try these recipes for Crab-Stuffed Baked Potatoes and Crab Toast. The recipes, of course, may be enjoyed throughout the year .
The Crab-Stuffed Baked Potatoes recipe offers a new twist on your ordinary baked potatoes, and the Crab Toast is a change from your usual open-faced sandwich. You’re sure to find both delicious.
CRAB-STUFFED BAKED POTATOES
4 large baking potatoes
1/2 cup (1-stick) butter
1/2 cup whipping cream
3/4 teaspoon seasoned salt
1/2 teaspoon white pepper
1 large green onion, chopped
2 (6-ounce) cans crabmeat, drained
3/4 cup shredded cheddar cheese
2 tablespoons fresh minced parsley
Bake potatoes at 375 degrees for 1 hour or until well-done. Halve each potato lengthwise and scoop out pulp, leaving skins intact.
In a large bowl, mash potatoes with butter. Add whipping cream, seasoned salt, pepper and green onion. Stir in drained crabmeat.
Fill reserved potato skins with potato mixture. Sprinkle with cheese.
Bake at 350 degrees for about 15 minutes. To serve, sprinkle fresh parsley over cheese. Serves 4.
CRAB TOAST
1 (16-ounce) loaf French bread
1/4 cup butter, cubed
4 plum tomatoes, peeled and finely chopped, divided
1 jalapeno pepper, seeded and chopped (optional)
2 garlic cloves, minced
2 teaspoons minced fresh cilantro
2 (8-ounce) packages imitation crabmeat
3/4 cup ricotta cheese
1/2 cup sour cream
2 cups (8 ounces) shredded Italian cheese blend, divided
Cut bread in half horizontally and hollow out top and bottom, leaving 1-inch shells. Crumble removed bread and set aside.
In a large skillet, melt butter over medium heat; add half of the tomatoes. Add the jalapeno (if used), garlic and cilantro; cook and stir for 4 minutes. Remove from heat.
In a large bowl, combine the crab, ricotta and sour cream. Stir in the tomato mixture, reserved bread crumbs and 1 cup cheese blend.
Spoon into bread shells. Place on an ungreased baking sheet. Bake at 375 degrees for 15 minutes.
Top with remaining cheese blend and tomatoes. Bake 5-7 minutes longer or until cheese is melted.
To serve cut into 6 serving sections. Makes 6 servings.
