Chocolate Cherry Bars

You know who really likes Christmas cookies? Santa, that’s who. Or, at least that’s what we’ve been told since we were kids.

From the first time we heard about the jolly, chubby man in the red suit and fluffy white beard, we were told he sneaked into our homes and left gifts under the Christmas tree, while we were fast asleep. Since he worked so hard, we were supposed to leave a snack of cookies and milk for him somewhere near the tree, to thank him for all the presents under it.

If you think jolly Old St. Nick may be getting tired of the usual chocolate chip, oatmeal, peanut butter or sugar cookies, why not surprise him with a new kind this year? These Chocolate Cherry Bars are a real change from most Christmas cookies, and they taste great.

In addition, they’re quick and easy to make since they only have four ingredients. If you want to frost them, there’s only four ingredients in the icing recipe, too.

Santa may enjoy these cookie bars so much you just might find an extra gift under the tree in appreciation.

COCOLATE CHERRY BARS

1 box devil’s food cake mix

1 (20-ounce) can cherry pie filling

2 eggs

1 cup milk chocolate chips

FROSTING

1 (3-ounce) square of semi-sweet chocolate, melted (or equal amount of chocolate chips)

1 (3-ounce) package cream cheese, softened

1 teaspoon vanilla

1/2 to 3/4 cup powdered sugar

In a large bowl, mixing by hand, combine all four ingredients, blending well. Pour batter into a greased and floured 9-by-13-inch baking dish.

Bake at 350 degrees for 30 minutes or until a toothpick inserted in center of baking dish comes out clean. Cool and, if desired, spread icing over top of cookies before cutting into bars.

To make the frosting, mix beat chocolate, cream cheese and vanilla in a medium bowl until smooth. Gradually add powdered sugar until you reach your desired consistency.
