Cheesy Chicken Pizza, Chicken Fiesta Dip

With rising food prices, we’re all looking for ways to save money whenever possible. You can make the following two recipes using just two cups of cooked, cubed chicken breast, creating dishes that are not only tasty but also economical.

If you have children in your household, they will love both the Cheesy Chicken Pizza and the Chicken Fiesta Dip. Since they’re easy to make, you may love them as much as the kids!

Although the recipes call for cooked chicken, for added flavor, I like to use my Foreman Grill and grill the chicken breasts before dicing it up. However, any kind of cooked chicken works well.

CHEESY CHICKEN PIZZA

1 (12-inch) pizza crust dough (from dry pizza mix, refrigerated tube or homemade)

1 (8-ounce) can pizza sauce

1/2 cup diced, cooked chicken

1 small onion, sliced

1/4 cup chopped green pepper

1/4 cup chopped red pepper

1/4 cup sliced black olives (optional)

1 cup (4 ounces) shredded cheddar cheese

1 cup (4 ounces) shredded mozzarella cheese

Work pizza crust onto a greased baking pizza pan all the way to the edge of the pan. Spread with pizza sauce. Top with chicken, onion, peppers and black olives, if used. Sprinkle with cheeses. Bake on lowest rack in oven at 400 degrees for 16 minutes or until crust is golden brown. Makes 4 servings.

CHICKEN FIESTA DIP

4 ounces cream cheese (1/2 of an 8-ounce block), softened

1 cup dairy sour cream

1 cup shredded Mexican blend cheese, divided

1 packet dry taco seasoning mix

4 green onions, sliced

1 1/2 cups chopped, cooked chicken

1 small tomato, chopped

1/4 cup sliced, black olives

1 bag of your choice of crackers

Preheat oven to 350 degrees.

Mix cream cheese and sour cream, 1/2 cup of shredded cheese, taco seasoning and onions. Stir in chicken.

Spoon into 1 1/2-quart casserole dish or 9-inch pie plate. Bake 25 minutes or until heated through.

Top with remaining 1/2 cup shredded cheese, tomatoes and olives. Serve with crackers. Makes 4 cups of dip.
