With Father’s Day right around the corner, many of us are trying to think of ways to make the day special for Dad. Some fathers look forward to dinner out at their favorite restaurant, while others may prefer a picnic lunch beside his favorite lake or river. Then, there are those who look forward to a barbecue at home where they can enjoy a relaxing afternoon with their family.
If you decide to stay at home and grill a steak or other meat, you’ll need to serve some side dishes, too. These recipes for Easy Tostada Casserole and Chunky Guacamole Dip are great with any barbecue dinner and are sure to be a hit with Dad and everyone else.
EASY TOSTADA CASSEROLE
1 pound ground beef
1 (15-ounce) can OR (2 cups) tomato sauce, divided
1 envelope taco seasoning mix
2 1/2 cups corn chips, divided
1 (15 1/2-ounce) can refried beans
1 1/2 cup shredded cheddar cheese
Sour Cream (optional)
In large skillet, brown ground beef. Add 1 1/2 cups of tomato sauce and seasoning mix, stirring to mix well
Line bottom of an 11-by-8-by-2-inch baking dish with 2 cups corn chips. Crush remaining corn chips and set aside.
Spoon meat mixture over corn chips in baking dish. Combine remaining tomato sauce and refried beans; spread over ground beef mixture. Sprinkle 1/2 cup of shredded cheese over the top.
Bake at 375 degrees for 25 minutes. Remove from oven and sprinkle with remaining shredded cheese and crushed corn chips. Bake 5 minutes more.
Serve with a dollop of sour cream on top, if desired. Makes 8 servings.
CHUNKY GUACAMOLE DIP
1 medium-size tomato, finely chopped
1 small jalapeno pepper, finely chopped (optional)
1 green onion, chopped (both green and white parts)
1 small clove garlic, minced
1/2 teaspoon chopped fresh cilantro
1 teaspoon lime juice
1/4 teaspoon salt
1 medium avocado
In a medium mixing bowl, combine tomato, jalapeno, green onion, garlic, cilantro, lime juice and salt; mix well.
Peel and seed avocado; cut into 1/2-inch cubes. Stir avocado cubes into tomato mixture.
Serve immediately with your favorite nacho chips or corn chips. Makes 1 1/2 cups of dip.
