There’s nothing like the aroma of cinnamon wafting through the kitchen as you open the door on a cold, snowy winter day! There’s something very welcoming and inviting about the simple spice that most of us probably take for granted. We use it in so many different ways, and it always adds that special touch to familiar, old-fashioned desserts like rice pudding or apple pie.
It doesn’t take much cinnamon to flavor your favorite spice cookies or breads, like banana or zucchini bread. However, even if you add a tad more than called for, it tends to only enhance the flavor, instead of overpowering it.
If you want to make a quick and inexpensive, yet tasty dessert, this recipe for Apple Walnut Squares is the answer. While they’re baking, the cinnamon aroma will please you almost as much as when they’re done and you get to eat them. These are great with a cup of coffee, hot apple cider or a glass of white or chocolate milk
APPLE WALNUT SQUARES
1/2 cup butter, softened
1 cup sugar
1 egg
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1 medium tart apple, peeled and chopped
3/4 cup chopped walnuts
In a mixing bowl, cream butter and sugar. Add the egg. Combine flour, baking powder, baking soda and cinnamon; gradually add to the creamed mixture, beating just until combined. Stir in apple and walnuts.
Pour into a greased 8-inch square baking dish. Bake at 350 degrees for 35-40 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack, before cutting into squares. Makes 16 squares.
