Mexicana Zucchini and Tenderloin Pork Chops with Mushroom Gravy

Summer vegetable gardens had a rough beginning this year, but they’ve managed to produce a welcome zucchini crop in spite of the season’s wet beginning. If you’re looking for a new way to fix this great vegetable, then this Mexicana Zucchini offers a new twist on an old favorite.

MEXICANA ZUCCHINI

1 medium onion, thinly sliced

1 tablespoon vegetable oil

1 1/2 pounds zucchini, thinly sliced

1 (14 1/2-ounce) can fire roasted garlic diced tomatoes

2 tablespoons diced green chilies

1 teaspoon seasoned salt

3/4 teaspoon garlic powder with parsley

1/2 teaspoon seasoned pepper

1 cup (4 ounces) shredded Monterey Jack cheese

In a medium skillet, saute onion in oil; add remaining ingredients, except cheese. Bring to a boil; reduce heat and simmer, uncovered, 5 to 10 minutes.

Place zucchini mixture in a square or oblong baking dish and top with cheese. Bake, uncovered, in 375-degree oven for 10 minutes or until cheese melts. Makes 6 to 8 servings.

TENDERLOIN PORK CHOPS WITH MUSHROOM GRAVY

1 envelope brown gravy mix

1/2 cup water

3 tablespoons soy sauce

2 tablespoons balsamic or red wine vinegar

1 clove garlic, minced

6 (1/2-inch-thick) tenderloin pork chops

1/4 cup olive or vegetable oil

1/2 pound fresh mushrooms, sliced

1 medium onion, sliced and separated into rings

Hot cooked rice (make enough for the amount you want)

In a small bowl, combine the first five ingredients until blended; set aside.

In a large skillet, brown pork chops in oil on all sides. Stir in the gravy mixture; mushrooms and onion. Bring to a boil.

Reduce heat; cover and simmer for 10-15 minutes or until meat juices run clear and vegetables are tender.

Serve over hot rice. Makes 6 servings.
