Chicken Breasts Supreme and Parmesan Potatoes

Chicken is a popular main dish no matter how it’s served – fried, baked, grilled or even in a slow cooker, like this recipe for Chicken Breasts Supreme. It offers a twist on your typical slow cooker chicken dish, though, since it calls for bacon, mushrooms and Swiss cheese.

If you want a tasty side dish to accompany the chicken, this recipe for Potatoes Parmesan is sure to be a hit. It’s also great served with grilled pork steaks or any other favorite meat.

CHICKEN BREASTS SUPREME

2 slices bacon

6 boneless, skinless chicken breast strips

1 (4.5-ounce) jar or can sliced mushrooms, drained

1 (10 3/4-ounce) can condensed cream of chicken soup

2 tablespoons dry sherry, (optional)

3 (ounces) sliced Swiss cheese

1 tablespoon chopped chives

3 cups frozen 100 percent broccoli florets

Cook bacon in large skillet over medium-high heat until crisp. Remove bacon from skillet; drain on paper towels. Reserve bacon drippings in skillet.

Add chicken to bacon drippings in skillet; cook over medium-high heat for 3 to 5 minutes or until lightly browned, turning once. Transfer chicken to 4- to 6-quart slow cooker. Top with mushrooms.

In same skillet, stir together soup and sherry (if used). Spoon over mushrooms. Cover; cook on low setting for 3 to 4 hours.

Top mixture in slow cooker with cheese slices. Sprinkle with chives. Crumble bacon over cheese. Cover; cook on high setting for an additional 10 to 15 minutes or until cheese is melted.

Meanwhile, microwave broccoli in covered microwave-safe dish on high for 6 to 8 minutes or until crisp-tender. Arrange chicken, broccoli and mushrooms on serving platter. Serve with cooking juices. Makes 6 servings.

PARMESAN POTATOES

4 medium potatoes

1 stick of butter

Salt and pepper to taste

1/2 teaspoon garlic powder

1/2 teaspoon parsley flakes

1/2 cup grated Parmesan cheese

Peel and slice 4 medium potatoes and place in a baking dish. Melt one stick of butter and pour over potatoes.

Sprinkle with salt, pepper, garlic powder, and parsley flakes. Sprinkle liberally with Parmesan cheese.

Bake at 350 degrees about 25-30 minutes or until golden on top and tender. Makes 3-4 servings.
