Tuscan Bread (enough for 4 chunky slices)
1 clove of garlic, crushed
Extra virgin olive oil
Sea salt to taste
2 handfuls of fresh mixed ripe tomatoes
A small bunch of fresh basil leaves, finely chopped
Dice the tomatoes. Put them in a bowl. Add the finely chopped basil leaves, salt, crushed garlic and 1 tablespoon of olive oil. Mix together.
Thickly slice the bread and grill or toast on both sides. Drizzle with extra virgin olive oil. Spoon on the tomato mixture and enjoy.
