Zucchini-Turkey Soup and Swiss Mushroom Burgers

There’s nothing like a hot bowl of soup to take the chill off, especially if you’re feeling a little “under the weather” with a cold or flu this time of year. If so, this Zucchini-Turkey Soup will give you a little lift.

You might want to serve the soup with these Swiss Mushroom Burgers because, as the saying goes, “Feed a cold and starve a fever.”

Wash it down with a glass of fresh lemonade and it may be just what the doctor ordered. Enjoy!

ZUCCHINI-TURKEY SOUP

1 (8- or 10-ounce) package frozen green beans

2 cups zucchini, thinly sliced

2 cups turkey, cooked and chopped

1 medium potato, peeled and chopped

1 (8-ounce) can tomato sauce

1/2 cup onions, chopped

1 tablespoon instant chicken bouillon granules

1 teaspoon Worcestershire sauce

1/4 teaspoon salt

1/2 teaspoon garlic powder

Dash of black pepper

4 cups water

3 ounces cream cheese, softened

Thaw green beans. Once thawed, combine beans, zucchini, turkey, potato, tomato sauce, onions, bouillon, Worcestershire sauce, salt, garlic powder, black pepper, and water in a slow cooker. Cook on high for 2-3 hours.

Blend one cup hot soup with cream cheese. Return to slow cooker and stir well. Cook until hot. Makes 8 servings.

Note: You may use chicken instead of turkey.

SWISS MUSHROOM BURGERS

1/2 pound fresh mushrooms, cleaned and stems removed

1 teaspoon black pepper

1 teaspoon salt

1/2 cup beef broth

2 tablespoons margarine or butter

1 pound lean ground chuck

4 pretzel rolls

4 slices Swiss cheese

Thinly slice the mushrooms into a saute pan. Add the pepper, salt, broth and margarine or butter and heat. Simmer until mushrooms are tender and the sauce is slightly condensed.

Shape the beef into 4 patties and grill or fry for 7-8 minutes, or according to your preference. Place bottom half of pretzel roll on each plate and place a slice of Swiss cheese on each half.

Place hamburger patty on top of cheese slice. Divide the sauteed mushrooms evenly over each hamburger and spoon a little additional sauce over each.

Place the top half of each roll on top of each hamburger. Makes 4 servings.
