Oven Beef Hash and Poppy Seed Apple Slaw

With winter weather upon us now, we look for meals made of warm comfort foods to take the chill off. This Oven Beef Hash not only warms you up, but is a good way to stretch your beef dollar.

If you’re looking for something to serve with the hash, this Poppy Seed Apple Slaw is not just tasty, but also healthy and refreshing.

OVEN BEEF HASH

2 cups finely chopped, cooked potatoes

1 (13-ounce) can evaporated milk

1 1/2 cups finely chopped, cooked beef

1 1/4 cups finely crushed rich round crackers (about 30 crackers), divided

1/2 cup shredded carrot

1/3 cup finely chopped onion

1/3 cup snipped parsley (or 1 tablespoon dried parsley flakes)

1 tablespoon Worcestershire sauce

3/4 teaspoon salt

1/8 teaspoon pepper

1/8 teaspoon dried oregano, crushed

1 tablespoon butter or margarine, melted

Lightly stir together potatoes, evaporated milk, beef, 1 cup of the crushed crackers, shredded carrot, onion,

Parsley flakes, Worcestershire sauce, salt, pepper and oregano. Turn mixture into a 1 1/2-quart casserole dish.

Combine the remaining 1/4 cup cracker crumbs and melted butter. Sprinkle atop casserole.

Bake, covered, at 350 degrees until heated through, 35 to 40 minutes. Makes 4 to 6 servings.

POPPY SEED APPLE SLAW

1/2 cup store-bought coleslaw dressing

1 teaspoon poppy seeds

2 teaspoons honey

1 teaspoon cider vinegar

2 cups store-bought coleslaw blend (or you may make your own with cabbage and carrots)

2 cups (2 medium) diced unpeeled red apples

In a large bowl, combine dressing, poppy seeds, honey and vinegar; blend well.

Add coleslaw blend and apples; toss gently to combine. Makes 8 (1/2-cup) servings.
