Confetti Chili and Baked Crabmeat Dip

It’s Super Bowl time again, and football fans are planning to get together with family and friends to watch the big game and cheer on their favorite team. For many, the food served at those get-togethers is just as important as the game, so here are a couple of recipes you might want to share at the party you’re hosting or attending.

Chili is a favorite at Super Bowl parties, and this Confetti Chili adds a new twist to an old favorite. You’ll need some tasty snacks to serve with the chili, and this Hot Crabmeat Dip is sure to be a hit.

CONFETTI CHILI

1 teaspoon oil

3/4 pound ground turkey or beef

1 cup chopped onions

1 cup chopped red, yellow or green bell pepper

2 garlic cloves, minced

3 teaspoons chili powder

1 teaspoon cumin

1/2 teaspoon salt

1/8 teaspoon crushed red pepper flakes

1 (28-ounce) can diced tomatoes, undrained

1 (15-ounce) can black beans, drained and rinsed

1 (19-ounce) can cannellini or great northern beans, drained and rinsed

1 cup frozen corn (from 16-ounce package)

1/2 cup shredded sharp cheddar cheese, plus more for garnishing individual servings

Heat oil in large nonstick skillet or Dutch oven over medium-high heat until hot. Add turkey or beef, onions, bell pepper and garlic; cook until meat is no longer pink, stirring frequently; drain.

Stir in remaining ingredients except corn and cheese. Bring to a boil. Reduce heat and simmer 20 minutes.

Add corn; cover and simmer an additional 10 minutes. Sprinkle 1/2 cup of cheese over pot of chili.

When ready to eat, sprinkle 1 tablespoon of cheese on each serving. Makes 5 (1 1/2-cup) servings.

BAKED CRABMEAT DIP

1 (8-ounce) package cream cheese

1 package dry ranch dressing mix

1 (6 1/2-ounce) can crabmeat

2 green onions, sliced

Preheat oven to 350 degrees. Mix all ingredients together. Put in a baking dish and heat in oven for 15 minutes, or until heated through.

Serve with your favorite crackers or Melba toast for dipping. Makes about 12 servings.
