The brilliant colors etched across the hills in our area remind us it’s time to enjoy the scenery before all the leaves have fallen, and what better way than sitting on your deck or patio with a cup of hot chocolate and a dish of your favorite cookies? Here are two cookie recipes that may soon become your favorites, like they are mine.
The Candy Bar Crunch Cookies and the World’s Best Double Chip Cookies are easy to make and offer a different taste than your regular chocolate chip cookies. They’re great to make for the holidays or any time for a tasty, sweet treat!
CANDY BAR CRUNCH COOKIES
1 cup shortening
1 cup packed brown sugar
1/2 cup granulated sugar
2 eggs
2 tablespoons milk
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1/2 cup chopped walnuts
3 (1 5/8-ounce) Mounds or other chocolate coated coconut bars (about 1 cup), chilled and coarsely diced
Cream together shortening and sugars. Add eggs, milk, and vanilla; beat until fluffy.
Stir together flour, baking soda and salt; blend into creamed mixture. Stir in nuts; gently fold in candy.
Drop from tablespoon 2 inches apart on ungreased cookie sheet. Bake at 350 degrees for 12 to 14 minutes (or until light brown).
Cool on racks. Makes about 2-1/2 dozen.
WORLD’S BEST DOUBLE CHIP COOKIES
3/4 cup granulated sugar
1 cup brown sugar
1 cup butter
1 tablespoon vanilla
2 eggs, slightly beaten
3 cups flour
3/4 teaspoon baking soda
3/4 teaspoon salt
1 1/2 cups semi-sweet chocolate chips
1 1/2 cups peanut butter chips
1 cup chopped nuts (optional)
In a large bowl, combine sugars; add in butter and cream together with the sugar. Add vanilla and eggs; mix together.
In a separate bowl, sift the dry ingredients and then add to the creamed mixture. Mix well; the dough will be stiff. Add the chocolate and peanut butter chips and nuts (if using).
Line the cookie sheets with baking parchment or wax paper. Drop dough with a small ice cream scoop onto the sheets. Bake 10-12 minutes at 350 degrees.
Remove from oven and cool on wire racks. Makes about 3 dozen cookies.
