Nothing says “Merry Christmas” to friends and family more than a gift of homemade candy! There are so many delicious recipes for chocolate fudge and peanut butter fudge, but not everyone is a chocolate or peanut butter lover, so it’s nice to have other types of candy on hand for those who prefer something a little different.
The following recipes for Butterscotch-Nut Fudge and Christmas Bark Candy not only offer other tasty options, but also are easy to make, which is especially important during this busy time of year. Merry Christmas everyone!
BUTTERSCOTCH-NUT FUDGE
1 (11- or 12-ounce package) butterscotch morsels
1 (6-ounce package) white vanilla morsels
1 (14-ounce) can sweetened condensed milk, not evaporated milk
Dash of salt
1 cup honey roasted pecans, chopped
1 1/2 teaspoons vanilla extract
In a heavy saucepan, over low heat, melt both butterscotch and white vanilla chips with sweetened condensed milk just long enough until the mixture is smooth and creamy. Add a dash of salt.
Remove from heat and stir in nuts and vanilla. Spread evenly into a wax paper-lined 8- or 9-inch square pan.
Chill 2 hours or until firm. Turn fudge onto cutting board; peel off paper and cut into squares. Store loosely covered at room temperature. Makes about 2 pounds.
CHRISTMAS BARK CANDY
1 (10- to 12-ounce) package vanilla chips
2 teaspoons vegetable oil
1 to 1 1/4 cups regular M&M’s candy or M&M’s miniature baking bits
In a microwave-safe bowl, heat vanilla chips and oil for 1 minute. Stir; then microwave an additional 10-20 seconds longer or until chips are melted, stirring occasionally. Cool for 5 minutes.
Stir in M&M’s candies or M&M’s miniature baking bits. Spread onto a wax paper-lined baking sheet.
Chill for 10 minutes in refrigerator. Remove from fridge and break into pieces.
Store in an airtight container at room temperature. Yields about a pound.
