If you’re looking for a couple of summertime desserts to make and you prefer something with fruit, this Apple Walnut Cake and these Strawberry Fritters are just what you need.
Both are easy to prepare and offer lots of delicious fruity flavor. The Apple Walnut Cake is great served with a dollop of whipped cream or ice cream, and the Strawberry Fritters go well with some extra Strawberry Sauce you can make.
APPLE WALNUT CAKE
1 (20-ounce) can apple pie filling
1 cup sugar
2 cups flour
1 teaspoon salt
1 1/2 teaspoons baking soda
2 eggs, beaten
1 teaspoon vanilla
2/3 cup cooking oil
3/4 cup chopped walnuts, divided
Topping:
1/2 cup sour cream
1 cup sugar
1/2 teaspoon salt
Preheat oven to 350 degrees. Spread pie filling in bottom of a buttered 9-by-13-inch pan.
Combine sugar, flour, salt and baking soda. Sprinkle sugar mixture over pie filling.
In a bowl combine eggs, vanilla and oil. Mix well. Add 1/2 cup nuts. Pour over ingredients in pan.
Bake at 350 for 40-50 minutes until cake springs back from light touch. Cool on rack for about 20 minutes.
Pierce warm cake all over with a fork. Combine topping ingredients and stir over medium until boiling. Pour over cake and sprinkle with remaining nuts. Serve with whipped topping or scoop of ice cream.
STRAWBERRY FRITTERS
1 cup flour
1/4 cup sugar
1/2 teaspoon salt
2/3 cup milk
2 eggs, beaten
1 teaspoon vanilla
1 cup fresh strawberries, sliced
Strawberry Sauce (optional)
1 pint fresh strawberries, divided
1 tablespoon cornstarch
1/2 cup sugar
1/2 cup water
1 tablespoon lemon juice
Combine dry ingredients in a mixing bowl. Gradually stir in milk, vanilla and then beaten eggs. Fold in berries.
Drop by spoonsful into hot fat (375 degrees) in skillet and fry 3-5 minutes or until golden brown. Drain on paper towels and dust or roll in confectioner’s sugar.
Serve with Strawberry Sauce if desired.
To make optional Strawberry Sauce, slice 1 cup of berries and puree 1 cup in blender. Set aside. In a small saucepan, combine and cook cornstarch, sugar and water, stirring constantly. When smooth and sugar is dissolved, stir in pureed berries and sliced berries.
Bring to a boil and continue stirring constantly. Boil 1 minute. Add lemon juice and stir until slightly thickened. Serve hot.
