Apple Pie Slices and Pork Chops and Apple Stuffing

Apple season is in full swing, and a large variety of tart or sweet and delicious fruit are available at most supermarkets and produce stands in our area.

Whether you like your apples in a pie or a cake, or even served with pork chops, there are so many ways to use them, including these recipes for Apple Pie Slices and Pork Chops with Apple Stuffing.

APPLE PIE SLICES

Crust:

2 cups flour

3/4 cup shortening

1 teaspoon salt

1 egg yolk, lightly beaten

1/2 cup milk

Filling:

5 cups sliced, peeled apples

1 cup sugar

2 tablespoons flour

1/2 teaspoon cinnamon

1 tablespoon butter

1 egg white, lightly beaten

Icing:

1 tablespoon butter, melted

3/4 cup powdered sugar

1/4 teaspoon vanilla

2-3 teaspoons milk

Preheat oven to 375 degrees. In a large bowl, combine the flour, shortening and salt. Mix with your hands until it resembles coarse crumbs. In a small bowl, combine the egg yolk and milk. Add to the dough and mix.

Divide the dough in two. Wrap one of the pieces of dough in plastic wrap and refrigerate. Pat or roll the other piece of dough into an ungreased 9-by-13-inch baking dish.

Peel and slice the apples and place on top of the crust. In a medium bowl, combine the sugar, flour and cinnamon. Sprinkle the mixture over the apples. Dot with butter.

Gently roll out the remaining crust on a lightly floured surface, large enough to fit the pan. Place over the apples. Brush with the egg white and bake at 375 degrees for 45 minutes.

Cool and top with the icing, if desired.

To make the icing, combine the butter, powdered sugar and vanilla and mix. Add enough milk to make the icing your desired consistency. Makes 15 servings.

PORK CHOPS WITH APPLE STUFFING

1 tablespoon olive oil

3 tablespoons butter, divided

4-5 boneless pork chops

1 apple, cored and chopped

1/2 cup onion, chopped

1 2/3 cups water

6-ounce package stuffing mix

Heat oil and 1 tablespoon butter in a large nonstick skillet over medium-high heat. Add pork chops; cook for 8-10 minutes, turning once. Remove chops; cover to keep warm.

Melt the remaining butter in skillet and add apple and onion. Cook for 3 to 5 minutes, stirring occasionally, until tender. Add water; bring to a boil. Stir in stuffing mix; remove from heat.

Arrange chops over stuffing mixture; cover and let stand for 5 minutes before serving. Serves 4 or 5.
