With schools back in session, your children probably come home looking for something to eat as soon as they walk in the door. Cookies and milk are a favorite afterschool snack, so you might want to make one or both of these recipes for Cereal Crunchies and Cream Cheese Cookies to satisfy their hunger until dinner is served.
The cookies also make great snacks to go in sack lunches or to serve after dinner for a sweet treat while the family is watching their favorite evening TV shows. Most grownups won’t be able to resist them either.
CEREAL CRUNCHIES
1/2 cup softened butter
1/2 cup granulated sugar
1/2 cup firmly packed brown sugar
1 unbeaten egg
1/2 teaspoon vanilla extract
1 cup sifted all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup quick-cooking rolled oats
1 cup Rice Krispies cereal
1/2 cup butterscotch chips
Cream together butter and sugars. Add in egg and vanilla and mix thoroughly.
Add flour, baking soda, baking powder and salt and mix well. Blend in oats, cereal and butterscotch chips.
Shape dough into balls, using a rounded teaspoonful for each. Place on greased baking sheets and flatten slightly.
Bake at 350 degrees for 8 to 10 minutes or until golden brown. Makes about 3 dozen.
CREAM CHEESE COOKIES
1 cup butter, softened
1 (3-ounce) package cream cheese, softened
1 cup white sugar
1 egg yolk
1/2 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1/2 cup powdered sugar (to dust baked cookies)
Preheat oven to 325 degrees. Lightly grease baking sheets.
In a large bowl, cream together butter, cream cheese and sugar until light and fluffy. Beat in egg yolk and vanilla.
Stir in flour until well blended. Drop dough by teaspoonfuls onto prepared baking sheets.
Bake in preheated oven for 15 minutes. Allow cookies to cool slightly on baking sheets before transferring to wire racks to cool completely.
Place a piece of waxed paper under wire racks and sift powdered sugar over cooled cookies. Makes about 3 dozen cookies.
