Broccoli-Cheese Soup, Stuffed French Bread

With the erratic weather this time of year, soup and a sandwich is always a good combination for lunch or supper. If it’s cold outside, there’s nothing like a steaming bowl of hot soup to warm you up inside and out. And, serving a nice, thick sandwich with that soup will help fill you up for hours.

If you’re looking for a soup to accompany your sandwich, this Broccoli-Cheese Soup works well. It goes great with this meaty Stuffed French Bread sandwich.

BROCCOLI-CHEESE SOUP

1 whole broccoli head, cleaned and cut into pieces

1 large carrot, cut in thirds and then in halves

1 large onion, cut in wedges

1 to 1 1/2 cups water

1 pint Half and Half (or 2 percent milk)

Pepper and salt to taste

1/2 pound Velveeta cheese, cut into chunks

Cook first 3 ingredients in pressure cooker for 2 minutes. Keep water in pressure cooker to add flavor. If boiling veggies in a regular pan, drain almost all water, leaving about 1/4 inch.

Chop veggies while in pot and add Half and Half, salt and pepper to taste and bring to boil. Turn burner down to medium, add cheese and cook until thickened. Makes 4 servings.

STUFFED FRENCH BREAD

1 pound ground beef

1 (1 1/4-ounce) package taco seasoning mix

1 loaf French bread, cut in half lengthwise

2/3 cup chopped lettuce

2/3 cup chopped pitted ripe olives

2/3 cup chopped green peppers

2/3 cup chopped tomatoes

2/3 cup tortilla chips, crushed

1 cup taco-flavored cheese

Taco sauce (optional)

Sour cream (optional)

Brown ground beef and drain; stir in taco seasoning. Hollow out French bread halves to form shell. Layer ground beef mixture, lettuce, olives, green peppers and tomatoes in bottom half of loaf.

Top with tortilla chips, cheese and top half of loaf. Heat stuffed loaf in microwave oven just until cheese melts.

Cut into quarters and serve with taco sauce and sour cream, if desired. Makes 4 servings.
