Breakfast Burritos and St. Louis Gooey Butter Coffee Cake

It’s said that breakfast is the most important meal of the day. This might be debatable, but if you’re looking something a little different than ham and eggs or waffles to start your day, these Breakfast Burritos or St. Louis Gooey Butter Coffee Cake might be the change you’re seeking.

BREAKFAST BURRITOS

1 pound bulk pork sausage

1 small onion, chopped

1/2 green pepper, chopped

1 (4-ounce) can mushroom stems and pieces, drained

8 flour tortillas, 7 inches, warmed

6 eggs, beaten

1 (4-ounce) cup shredded cheddar cheese

Salsa (optional)

Brown sausage in a skillet. Drain and keep 2 tablespoons of drippings, discarding the rest.

Add onion, green pepper and mushrooms to sausage. Saute until tender.

Scramble the eggs in separate skillet or in the microwave.

Place an equal amount of sausage mixture on each tortilla, then cover with an equal amount of eggs and 2 tablespoons of cheese.

Fold bottom of tortilla over filling and roll up.

Serve with salsa, if desired. Makes 8 burritos.

ST. LOUIS GOOEY BUTTER COFFEE CAKE

Crust:

1 cup all-purpose flour

1/3 cup butter

3 tablespoons sugar

Combine flour and sugar in a mixing bowl. Cut in butter until mixture resembles fine crumbs and starts to cling. Pat into bottom of a 9-by-9-by-2-inch baking pan.

Filling:

1 1/4 cups sugar

3/4 cup butter

1 teaspoon vanilla

1/4 cup light corn syrup

1 egg

1 cup flour

3/4 cup evaporated milk

Powdered sugar, sifted (optional)

Beat sugar and butter in a mixing bowl until combined. Beat in corn syrup, egg and vanilla until just combined. Add flour and evaporated milk alternately, beating until just combined. Batter will appear slightly curdled.

Pour into crust-lined baking pan. Bake at 350 degrees for 35 minutes or until cake is nearly firm when you shake it.

Let cool in pan on wire rack. Remove to serving plate and sprinkle with powdered sugar, if desired. Makes 9 servings.
