My Leader Yummy: Bacon Quiche Tarts and Gramma’s Sweet Rolls

With warmer weather upon us now and many spending more time outdoors, it’s good to start the day with a good breakfast to keep your energy level high until lunchtime.

For a little something different from bacon and eggs or cereal, you might like to try these Bacon Quiche Tarts. For those who crave a little something sweet to round out breakfast or later have something with your morning coffee, you might like to try Gramma’s Sweet Rolls

Bacon Quiche Tarts

1 (8 ounces) package cream cheese, softened

5 teaspoons milk

2 eggs

1/2 cup shredded Colby cheese

2 tablespoons chopped green pepper

1 tablespoon finely chopped onion

1 tube (8 ounces) refrigerated crescent rolls

5 bacon strips, cooked and crumbled

In a small bowl, beat cream cheese and milk until smooth. Add the eggs, cheese, green pepper and onion; mix well.

Separate dough into eight triangles; press onto the bottom and up the sides of a greased muffin pan.

Sprinkle half of the bacon crumbles into muffin cups.

Pour egg mixture over bacon; top with remaining bacon crumbles.

Bake uncovered, at 375 degrees for 18 to 20 minutes or until knife inserted comes out clean.

Serve warm. Makes 8 servings.

Gramma’s Sweet Rolls

1/2 cup sugar

1/2 cup soft butter

1 teaspoon salt

2 eggs

3/4 cup warm water (not hot…….110 to 115 degrees F.)

2 packages active dry yeast

4 cups all-purpose flour

1 10-ounce jar of your favorite fruit preserves (I use strawberry and apricot)

1 can prepared frosting

Cream sugar, butter, salt and eggs thoroughly. Dissolve yeast in water. Add creamed mixture and 1 1/2 cups flour to yeast mix. Beat on low speed with electric mixer for 5 minutes. Stir in remaining flour and let rise in a warm place about 1 1/2 hours. Stir down and turn onto a well-floured board. Divide into 24 equal pieces. Shape each piece into a smooth round ball. Cover with a cloth and let rest about 15 minutes. Place dough balls on two cookie sheets and spread to make a depression in center and fill with about 1 1/2 Tablespoons of preserves. Let rise about 30 minutes. Brush with melted butter and bake 15 to 18 minutes at 375 degrees. When slightly cooled, spread frosting around edges and drizzle some across center. Serve warm or cold. Makes 24 sweet rolls.
