Recipe to accompany story, “Golden Opportunity,” published 3-7-2013

1 envelope yeast

1 teaspoon honey

2 cups warm water

2 eggs

4 cups bread flour

1 tablespoon salt

1 tablespoon olive oil

1 teaspoon sesame seeds

Empty yeast envelope into a glass measuring cup and pour in honey. Fill container with warm water. Stir in 1 egg. Let mixture sit for 15 minutes.

In a large bowl, stir flour and salt together. Add the liquid mixture and the olive oil.

Stir until dough is formed. Cover and set in a warm place for 30 minutes.

Knead dough for 5 minutes. Set aside for 1 hour or until doubled. Cut dough into 3 equal strips. Lay the strips on a floured board and braid them into a loaf. Beat 1 egg and brush the loaf with the egg wash. Sprinkle sesame seeds on loaf.

Let loaf rest for 15 minutes while oven heats to 400 degrees. Bake loaf at 400 degrees for 23 minutes. Place bread on cooling rack.

Slice after 2-3 hours.
