During the week of Aug. 3, the Jefferson County Health Department inspected 44 food establishments. Scores ranged from 76 to 100. Some were routine inspections while others were reinspections where scores are not assigned. All inspections are unannounced visits.
Facilities considered low priority are not assigned a score. A low priority facility does not prepare food.
According to the Jefferson County Health Department, facilities start with a score of 100, and points are reduced based on observed violations:
■ Six points are deducted for priority violations that directly contribute to foodborne illness risk.
■ Three points are deducted for priority foundation violations that indirectly contribute to foodborne illness risk or enable priority violations.
■ One point for core violations related to general sanitation and good retail practices.
■ Two points for repeat violations of any type.
Dan Kane, environmental supervisor for the Health Department, said the agency does not have ranges for good or bad scores but instead looks at the overall score, adding that readers need to look at the types of violations.
He said a couple of priority violations are more concerning than several core violations.
In certain cases, the Health Department returns to a food establishment to reinspect, allowing time for the facility to correct issues. According to the Health Department, reinspection is not solely based on the score an establishment gets; it’s determined by the type of violation. Priority and priority foundation violations need to be corrected within a certain amount of time, and priority violations typically are corrected on the day of the inspection before the inspector leaves.
Kane said the department rarely closes a food establishment, and most temporary closures involve a power outage, fire or sewage backup.

The inspection scores for the week of Aug. 3 are listed below. They are all routine inspections unless otherwise noted.
■ Captain D’s, 1156 W. Gannon Drive, Festus, scored 90 on Aug. 7. Violations: water pitchers being filled at the hand sink; gap under back door; unsealed bag of seasoning; interior of the walk-in cooler door and microwave need repair; debris on bottom of cooler; and chipped sealing tile above dish washing sink.
■ Arby’s, 690 S. Truman Blvd., Festus, scored 94 on Aug. 3. Violations: debris on single-serve utensil holders and prep line shelving/debris or slime on soda machine; water damaged ceiling tiles; floors with debris/ceiling with dust/debris; and no caulking behind hand sink.
■ Burger King, 802 Lee Ave., Festus, scored 95 on Aug. 4. Violations: gap in hood filters; carbon buildup on hood above broiler and fryers; and dust/debris on ceiling in dry storage/debris on floor under equipment/dust buildup on ceiling/debris in grout in food prep area.
■ Cave Coffee House, 11533B Gamel Cemetery Road (Radiant Life), Festus, was inspected on Aug. 6. No score given due to low priority.
■ China King, 412 N. Main St., De Soto, was reinspected on Aug. 7. No score given.
■ Circle K, 10201 Business 21, Hillsboro, scored 98 on Aug. 5. Violations: bags of chips and pork rinds being stored less than 6 inches from floor; and no lid on trash can in restroom.
■ Circle K, 504 Jeffco Blvd., Arnold, scored 100 on Aug. 5.
■ Dar-E-Kreme, 7070 Hwy. BB, Cedar Hill, scored 97 on Aug. 8. Violations: damaged weather strip under back door; inner surface of ice machine soiled; and wet mop not hung up.
■ Culver’s, 200 S. Truman Blvd., Crystal City, scored 100 on Aug. 5.
■ Daddy O’s Cheesesteaks food truck scored 91 on Aug. 8. Violations: cheese and ranch dressing holding at incorrect temperature; and soiled grill.
■ Domino’s Pizza, 1655 S. Old Hwy. 141, Fenton, scored 93 on Aug. 4. Violations: air freshener and stainless steel cleaner stored near pizza pans; and wet wiping clothing hung next to hand sink in between uses.
■ El Lobo Rojo, 106 N. Main St., De Soto, scored 85 on Aug. 7. Violations: biofilm growth on ice machine deflector plate/soiled can opener; incorrect sanitizing solution; spider webs/drain flies; ice machine drain pipe taped together and leaking; cleaning solution line above dishwasher leaking; calcium buildup in dishwasher; water damage to wall; and black residue on caulking above dish sink.
■ Fatboy’s Saloon and Grill, 301 E. Main St., De Soto, scored 99 on Aug. 6. Violation: torn gaskets on reach-in coolers/left door of cooler will not stay closed.
■ Fox Run Golf Club, 1 Putt Lane, Eureka, was reinspected on Aug. 8. No score given.
■ Frankie Gianino’s Grill and Bar, 1209 Main St., Imperial, was reinspected on Aug. 8. No score given.
■ Gas Mart, 2099 Old Hwy. 21, Imperial, scored 77 on Aug. 8.
