During the week of March 29, the Jefferson County Health Department inspected 39 food establishments. Scores ranged from 80-100. Some were routine inspections while others were reinspections where scores are not assigned. All inspections are unannounced visits.
Facilities considered low priority are not assigned a score. A low priority facility does not prepare food.
According to the Jefferson County Health Department, facilities start with a score of 100, and points are reduced based on observed violations:
■ Six points are deducted for priority violations that directly contribute to foodborne illness risk.
■ Three points are deducted for priority foundation violations that indirectly contribute to foodborne illness risk or enable priority violations.
■ One point for core violations related to general sanitation and good retail practices.
■ Two points for repeat violations of any type.
Dan Kane, environmental supervisor for the Health Department, said the agency does not have ranges for good or bad scores but instead looks at the overall score, adding that readers need to look at the types of violations.
He said a couple of priority violations are more concerning than several core violations.
In certain cases, the Health Department returns to a food establishment to reinspect, allowing time for the facility to correct issues. According to the Health Department, reinspection is not solely based on the score an establishment gets; it’s determined by the type of violation. Priority and priority foundation violations need to be corrected within a certain amount of time, and priority violations typically are corrected on the day of the inspection before the inspector leaves.
Kane said the department rarely closes a food establishment, and most temporary closures involve a power outage, fire or sewage backup.

The inspection scores for the week of March 29 are listed below. They are all routine inspections unless otherwise noted.
■ Arby’s, 224 Arnold Crossroads Center, Arnold, scored 99 on April 3. Violation: dusty hood filters/soiled ice scoop handle.
■ Cafe Smoke N Pi, 1236 Hwy. 21, De Soto, scored 91 on March 31. Violations: dead insects in utility room/light guards; gap in side door; torn gaskets; dust buildup on fan guards in walk-in cooler; missing tile; dust and grease buildup on wall vents in back fryer area; and broken light guards.
■ Childtime Children’s Center, 2130 Michigan Ave., Arnold, scored 100 on April 1.
■ Comfort Inn, 1303 Veterans Blvd., Festus, was reinspected on April 1. No score given.
■ Cracker Barrel, 1193 Scenic Drive, Herculaneum, scored 97 on March 30. Violation: cracked caulking on hand sink.
■ Culver’s, 200 S. Truman Blvd., Crystal City, scored 100 on April 1.
■ Denny’s, 1203 Drury Lane, Arnold, scored 80 on April 2. Violations: soiled plates mixed with clean plates on grill line/dish racks in dishwasher in disrepair; gaps in doors; cold drawers on grill line in disrepair/cardboard wedged under vent/rusted-out spots in walk-in cooler/grill hood filters in disrepair; torn gaskets/soiled cold drawers, microwaves, hood, hood filters, grill area, shelves on cookline, reach-in freezer condenser, drawer, ice buckets, reach-in cooler and oven and grill drains/dusty evaporator; soiled grease receptacle; enclosed trash area littered with unnecessary items; debris buildup on walls, lights, outlets, grout and cookline floor; gaps in wall covering/openings in grill line not easily cleanable/gaps between wall and tables; missing tiles; and dusty air vents.
■ Drury Inn and Suites, 3800 Hwy. 141, Arnold, scored 100 on March 31.
■ Exploration Station, 4235 Gravois Road, House Springs, scored 89 on March 31. Violations: on duty manager without approved manager food safety certificate; milk above correct temperature; thermometer not working in refrigerator; and bottom of refrigerator soiled.
■ Festus Elementary School Lower Cafeteria, 1500 Mid-Meadow Lane, Festus, scored 100 on March 30.
■ Festus Elementary School Upper Cafeteria, 1500 Mid-Meadow Lane, Festus, scored 93 on March 30. Violations: Employee didn’t use paper towel to shut off sink after washing hands; and rusted-out corner of top surface under washing machine lid.
■ Festus Intermediate School, 1501 Mid-Meadow Lane, Festus, scored 100 on March 30.
■ Festus Middle School, 1717 W. Main St., Festus, scored 98 on March 30. Violations: calcium buildup in ice machine; and wet wash cloths on counter.
■ Festus High School, 501 West Wind Drive, Festus, scored 97 on March 30. Violation: unlabeled spray bottle.
■ Granny Franny’s Diner, 3191 Flucom Road, De Soto, scored 84 on April 1. Violations: several dented cans; containers stacked wet; detached ceiling joints and metal covering in walk-in cooler; several containers in disrepair; mineral buildup inside dishwasher; dishwasher thermometer not working; grease buildup under flat top; missing hot water handle on dish sink and faucet leaking; dusty ceiling and light above steam table; and dusty ceiling vents.
■ Imo’s Pizza, 1870 Little Brennan Road, High Ridge, scored 99 on April 3. Violation: vent needs cleaning.
■ Jack In the Box, 1197 Scenic Drive, Herculaneum, scored 94 on March 30. Violations: grease buildup in fryers; and wall covering not secured/broken coving tiles.
■ Jack In the Box, 5300 Caroline Drive, High Ridge, scored 93 on April 1. Violations: ice buildup in walk-in freezer including around entrance and floor; soiled box cutters; and box cutters left on food contact surfaces.
■ Keaton Residential Care Center, 120 N. Mill St., Festus, scored 100 on April 1.
■ Kentucky Fried Chicken, 1436 Jeffco Blvd., Arnold, scored 87 on April 1. Violations: dead roaches in mop sink and behind fryers/live roach in lobby; walk-in cooler leaking and ice accumulation in reach-in freezer; grease buildup in fryer and hot-hold cabinet; broken tiles; and grease buildup behind fryers/debris on floor in several areas.
■ Lion’s Choice, 943 Jeffco Blvd., Arnold, scored 93 on April 1. Violations: dented can; box of potatoes and sauce being stored on floor; and soiled microwave.
■ Mississippi River Eagles Aerie, 330 Bailey Road, Crystal City, scored 93 on March 31. Violations: beer pitchers hanging near hand sink; hot side handle missing on faucet of dish sink; and coving and tiles in disrepair/hole in ceiling.

■ Corner Cup Micro Bakery, 2 Main St., Festus, scored 99 on March 31. Violation: detached wall covering.
■ Panera Bread Co., 1075 W. Gannon Drive, Festus, scored 94 on April 2. Violation: milk at incorrect temperature.
■ Steak N Shake, 999 Veterans Blvd., Festus, scored 82 on April 2. Violations: only one employee had food safety certification; no staff with manager food safety certification; paper towel dispenser not working at hand sink; incorrect sanitizer solution; unlabeled spray bottles; wet wash cloth on counter; and no caulking behind dish sink/gap between wall and table.
■ Syberg’s, 249 Arnold Crossroads Center, Arnold, scored 87 on March 31. Violations: raw fish stored above cheese sauce; items in cooler at incorrect temperature; and clean plastic containers stored on floor.
■ The Donut Hole, 803 N. Truman Blvd., Crystal City, was inspected on April 1. No score given due to low priority.
■ Toasted Coffee House, 3015 High Ridge Blvd., High Ridge, scored 96 on April 1. Violations: reach-in cooler missing thermometer; and scoops touching product.
■ VFW Post 1831, 1651 Veterans Drive, De Soto, scored 96 on March 31. Violations: mineral buildup in ice machine/soda gun nozzle covered in biofilm growth; and soiled microwave.
■ Villa Antonio Winery, 3660 Linhorst Road, Hillsboro, scored 94 on March 30. Violation: several containers of pizza sauce past use-by date.
