Mexican Salisbury Steaks and Mexican Taco-Mac

If you’re looking for a different way to serve Salisbury steaks, then this Mexican take on the dish may be the answer. It’s easy to make and sure to satisfy a hungry appetite.

Serve it with this Mexican Taco-Mac, another twist on an old favorite – macaroni and cheese. It’s a tasty dish, and best of all, it calls for ingredients you probably keep on hand. Enjoy!

MEXICAN SALISBURY STEAKS

1 pound lean ground beef

1 medium onion, finely chopped

2 tablespoons taco seasoning mix

1/2 cup chunky salsa (your choice of flavor and brand)

1/2 cup barbecue sauce (your choice of flavor and brand)

In a medium bowl, combine ground beef, onion and taco seasoning mix; mix well. Shape into 4 patties, about 1/2-inch thick.

Spray medium nonstick skillet with nonstick cooking spray. Heat over medium heat until hot. Add patties; cook 5 to 6 minutes or until browned on both sides, turning once. Drain, if necessary.

Add salsa and barbecue sauce; mix well. Reduce heat to low; cover and simmer 10 to 12 minutes or until beef is thoroughly cooked, turning patties and stirring once or twice. Makes 4 servings.

MEXICAN TACO-MAC

1 pound ground beef or ground turkey

1 (1.25-ounce) package taco seasoning

1 (14 1/2-ounce) can diced tomatoes, undrained

1 cup water

8 ounces dry macaroni or small spiral pasta

1/2 cup chopped celery

1 (8 1/2-ounce) package corn muffin mix

1 egg

1/3 cup milk

3/4 cup shredded cheddar or Monterey Jack cheese

In medium skillet, brown ground beef or turkey until crumbly. Blend in taco seasoning, tomatoes, water, pasta and celery. Bring to a boil; reduce heat, cover and simmer 20 minutes.

In a medium bowl, combine corn muffin mix, egg and milk; stir with a fork just to mix. Place beef or turkey mixture in a 2 1/2-quart casserole dish. Spoon dollops of corn muffin mix on top.

Bake in a 400-degrees oven for 15 to 20 minutes and sprinkle top of Taco-Mac with shredded cheese about 5 minutes before removing from oven and then cook until cheese has just melted. Makes 6 to 8 servings.
