With today’s busy lifestyle, it’s great when you can save a little time preparing dinner. If you’re looking for an easy-to-make recipe that doesn’t require a lot of cleanup, this one-pan Swiss Steak Dinner fits the bill.
And, if your family likes chocolate chip cookies, then you’ll want to try these Chocolate Chip Bars, another time-saving recipe. They’re just as delicious as chocolate chip cookies but save you the trouble of baking multiple pans of the sweet treats.
SWISS STEAK DINNER
6 cube steaks (about 1-1/2 pounds)
3 tablespoons all-purpose flour
1 tablespoon chopped fresh parsley
1/4 teaspoon dried thyme leaves
1/8 teaspoon pepper
2 tablespoons olive or vegetable oil
1/2 cup sliced (1/4-inch) onions
2 medium carrots, cut into 1 1/2-by-1/4-inch strips
3 medium-size potatoes, washed and peeled and cut into 1/4-inch slices
8 ounces sliced fresh mushrooms, sliced
1 (10 1/2-ounce) can condensed French onion soup
In a 9-inch pie pan, stir together flour, parsley, thyme and pepper. Coat steaks with flour mixture.
In a large, heavy skillet or Dutch oven, heat oil; add steak and brown over medium-high heat for 3-4 minutes on each side.
Add all remaining ingredients. Reduce heat to low.
Cover and continue cooking on low until meat and vegetables are tender, about 50-60 minutes. Makes 6 servings.
CHOCOLATE CHIP BARS
1 1/2 cups flour
1/2 cup light brown sugar
1/2 cup butter or margarine (1-stick)
2 cups mini chocolate morsels
1 can sweetened condensed milk (not evaporated)
1 egg, slightly beaten
1 teaspoon vanilla
1 cup chopped nuts (your choice of what kind)
Stir together: flour, brown sugar and cut in butter or margarine. Stir in 1/2 cup chocolate chips. Press into a 13-by-9-by-2-inch baking pan. Bake at 350 degrees for 15 minutes.
Meanwhile, in a medium-size bowl, combine sweetened condensed milk, egg and vanilla. Stir in 1 1/2 cups chocolate chips and nuts and spread over baked crust.
Bake 25 minutes or until golden brown. Cut into bars when cool. Makes 36 bars.
