My Leader Yummy: Southern Maple-Glazed Meatballs and Cheesy Potatoes

If you’re looking for a way to make your meat budget go further, ground beef is a good choice as it can be used in so many different recipes. These Southern Maple-Glazed Meatballs are just one example and these Cheesy Potatoes go great with them.

Southern Maple-Glazed Meatballs

3 slices white bread, torn into pieces

1/2 cup milk

2 large eggs, lightly beaten

1 tablespoon prepared horseradish

1/2 teaspoon salt

1/2 teaspoon black pepper

1 1/2 pounds ground beef

1/2 cup ketchup

1/4 cup water

1/4 cup soy sauce

1/3 cup maple syrup

1/2 teaspoon dry mustard

Soak bread in milk. Combine bread mixture, eggs, horseradish, salt and pepper in a bowl; stir well. Add beef; mix well.

Shape beef mixture into 1-inch balls. Place on a rack in shallow broiler pan. Bake at 450 degrees for 10 to 15 minutes or until all meatballs are done.

Combine ketchup, water, soy sauce, maple syrup and dry mustard in a saucepan; cook over medium heat for 5 minutes or until bubbly, stirring occasionally.

Add meatballs to sauce and cook 5 minutes or until thoroughly heated. Serve warm.

Makes 5 servings.

Cheesy Potatoes

1 (32-ounce package.) frozen hash brown potatoes

1/4 cup butter, melted

1 can (10.5 ounces) cream of mushroom soup

1 (8 ounces) container sour cream

1 (8 ounces) container Cheese Whiz

1 teaspoon each, salt and black pepper

1/2 cup chopped onions

1 cup shredded Colby Jack cheese

Thaw hash browns to room temperature.

Mix together all ingredients in order given.

Place in a 9x13-inch baking pan or dish.

Bake at 350 degrees for 40-45 minutes.

During the last 5 minutes of baking, sprinkle shredded cheese over all or until it melts.
