If you’re looking for a tasty steak recipe and one that won’t break the bank, this Smothered Steak and Gravy recipe is great over mashed potatoes or cooked noodles. You might like to round off your meal with these great tasting Cherry Scotchies cookies or just have them for a snack.
Smothered Steak and Gravy
1 1/2 pounds round steak
1 teaspoon butter
Salt and pepper to taste
2 cups hot beef bouillon
2 cups baby carrots, cut in half lengthwise
1 medium onion, chopped
1 (4 ounce) can of mushroom stems and pieces, drained
1 tablespoon flour
1/2 cup cold water
Cut steak into serving pieces; brown in butter. Season with salt and pepper.
Add hot beef bouillon; simmer for 30-40 minutes or until meat is tender on low heat.
Add carrots and onion; cook for 30 minutes, adding more beef bouillon or water, if needed. Add mushrooms.
Thicken with flour mixed with cold water.
Serve over desired amount of mashed potatoes or cooked noodles.
Makes 5-6 servings.
Cherry Scotchies
2 cups all-purpose flour
3/4 cup firmly packed brown sugar
1/2 cup flaked coconut
3/4 cup butter, softened
1 egg
1 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons all-purpose flour
1/2 cup chopped maraschino cherries, drained
6 ounce-package butterscotch pieces
Powdered sugar
Preheat oven to 350 degrees. Grease and flour a 13x9-inch baking pan.
In a 3-quart mixer bowl combine all ingredients except flour, cherries and butterscotch pieces.
Beat at low speed, scraping sides of bowl often, until well mixed (1 to 2 minutes).
In a small bowl, combine flour and drained cherries; toss to combine.
Stir in cherries and butterscotch pieces.
Spread into prepared pan.
Bake near center of oven at 350 degrees for 20 to 25 minutes or until edges are lightly browned.
Cool completely; sprinkle with powdered sugar. Cut into bars.
Makes 3 dozen bars.
