Accompanied story, “He’s Raising More than Apples and Peaches,” published 9-12-2013
8 tart apples, peeled and sliced, any variety (If you use yellow delicious, sprinkle lemon juice on them.)
1/2 cup brown sugar
1/2 cup white sugar
2 tablespoon tapioca
1 teaspoon cinnamon
1/4 cup melted butter
Place sliced apples in a skillet over medium heat with only enough water to cover the bottom of the skillet; cover with lid and lightly steam.
Combine the brown sugar, white sugar, tapioca, cinnamon and melted butter.
When the apples have steamed for 5-8 minutes, add the sugars-tapioca-cinnamon mixture.
Continue cooking over a low heat until mixture thickens.
Remove from heat and drizzle melted butter on top.
Serve warm plain or over ice cream.
It is quick and easy.
