Pork and Apple Supper and Orange-Pineapple Delight Salad

PORK AND APPLE SUPPER

1 1/2 pounds boneless barbecue-seasoned pork shoulder, cut into cubes

1 tablespoon olive oil

4 cups water

2 tablespoons chicken bouillon granules

1 teaspoon chopped dried onions

1/4 teaspoon black pepper

10 to 12 small red potatoes or 5 to 6 medium red potatoes, quartered

3/4 cup baby carrots, cleaned and cut in chunks

3 medium tart apples, peeled and cut into wedges

2 tablespoons cornstarch

2 tablespoons cold water

1/4 cup honey barbecue sauce

In a Dutch oven, brown the pork in oil. Add water, bouillon, dried onions and black pepper; bring to a boil. Reduce heat; cover and simmer for 1 to 1/2 hours or until pork is almost tender.

Add potatoes and carrots; cover and cook for 15 minutes. Add apples; cover and cook for 10-12 minutes or until crisp-tender.

Combine cornstarch and cold water until smooth; stir into pork mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in barbecue sauce until well-blended and serve warm. Makes 6 to 8 servings.

ORANGE-PINEAPPLE DELIGHT SALAD

2 cups small-curd cottage cheese

2 cups crushed pineapple, drained

1 (11-ounce) can Mandarin orange slices, drained

1 cup mini marshmallows

1 small package orange-flavored gelatin

1 small package pineapple-flavored gelatin

2 cups whipped topping

Mix the cottage cheese with the crushed pineapple. Add both boxes of gelatin mix and stir until well blended.

Add the Mandarin orange slices and mini marshmallows. Add the whipped topping and gently fold into mixture until well blended.

Chill before serving. This salad can be served on a bed of lettuce or just by itself on a plate.
