My Leader Yummy – Streusel Strawberry Pizza

Leader food columnist Kathleen Brotherton says you're sure to love this "pizza dessert" -- Streusel Strawberry Pizza.

Pizza, a favorite with children and adults alike, is great for lunch or dinner. But, if you change up the ingredients, pizza can even make a great dessert.

This Streusel Strawberry Pizza not only adds a little color to an otherwise dreary, winter day, but also this strawberry dessert satisfies that after-dinner sweet tooth.

It’s quick and easy to make, too. Just add a dollop of whipped cream, and you’ve got a delicious dessert everyone’s sure to love!

STREUSEL STRAWBERRY PIZZA

1 (18 1/4-ounce) package of strawberry or white cake mix

1 1/4 cups quick-cooking oats

1/3 cup butter or margarine, softened

1 egg

1 (21-ounce) can strawberry pie filling*

1/2 cup chopped nuts

1/4 cup packed brown sugar

1/8 teaspoon ground cinnamon

In a mixing bowl, combine the dry cake mix, oats and butter until blended; set aside 3/4 cup for topping.

Add egg to the remaining crumb mixture and mix well. Press the mixture into a greased 12-inch pizza pan and build up edges.

Bake crust at 350 degrees for 12 minutes. Then, spread pie filling over crust to within about 1-inch of the edges.

For the topping, combine the nuts, brown sugar, cinnamon and reserved crumb mixture. Sprinkle mixture over filling.

Bake an additional 15-20 minutes or until lightly browned. Cool on a wire rack.

Refrigerate any leftovers. Makes 8-10 servings.

Note: If you prefer a different pie filling, like apple, peach, cherry or blueberry, any can be substituted for the strawberry filling and is just as flavorful. If you’re using a different pie filling, though, you’ll want to use the white cake mix.
