Summer is one of the busiest times of the year, with so many outdoor activities to keep us on the go, like tending to lawns, vegetable gardens and flowers. So, it’s nice to have some stress-free meals and desserts to prepare on those hectic days.
One handy item to keep on hand for days like that is a package of flour tortillas. They may be used in so many ways, for entrees and desserts alike.
Here are two easy-to-make and tasty recipes that call for tortillas – Steak Tacos and Baked Apple Puffs.
STEAK TACOS
1 pound sirloin steak, thinly sliced
1/2 (1.25-ounce package) taco seasoning mix
1 (14-ounce) can of chili with no beans
6 to 8 (6-inch) flour tortillas
1/4 cup sliced green onions
1/2 cup chopped tomatoes
2 cups shredded lettuce
2 cups shredded cheddar or Monterey Jack cheese
1 avocado, thinly sliced
Taco sauce
In a large nonstick skillet, heat steak and taco seasoning mix. Cook for 8-10 minutes until beef is browned; then add the chili and heat through.
Heat tortillas as directed on package.
Spoon warm steak and chili onto tortillas.
Top each filled taco with green onions, tomatoes, lettuce, cheese and slices of avocado.
Sprinkle a little taco sauce over all and add a little more cheese
Fold tortilla over filling and serve.
Note: You may also use a package of Philly steaks. Just cook and shred them.
BAKED APPLE PUFFS
4 to 6 (6-inch) flour tortillas
1 can apple pie filling
1 teaspoon ground cinnamon
1/4 cup seedless raisins (optional)
Nonstick cooking spray
1/2 cup powdered sugar
1 tablespoon milk
Remove tortillas from refrigerator; let stand at room temperature for 15 minutes or until soft and flexible.
Preheat oven to 375 degrees.
Mix together pie filling, cinnamon and raisins.
Evenly divide filling onto centers of tortillas. Fold both sides over filling; fold bottom half of tortilla up then half down to close.
Place seam side down on a baking sheet sprayed lightly with cooking spray. Spray top and sides of tortillas lightly with cooking spray.
Bake 8 to 10 minutes or until light, golden brown.
In small bowl, mix together powdered sugar and milk and drizzle over apple puffs. Serve warm. Makes 4 to 6 servings.
Note: You may use any other fruit pie filling instead of apple and eliminate the raisins.
