Now is the time of year when pumpkins and ghost images decorate homes, businesses and classrooms across the county in anticipation of Halloween and all the fun activities the holiday represents.
If you like to celebrate the holiday, I have a couple of recipes you might want to add to your Halloween party menu – Spooky Joes and Chocolate Peanut Krispy Treats, both offering new twists on the old standbys.
They are sure to add both color and enjoyment to your party table. Happy Halloween!
SPOOKY JOES
2 pounds ground beef
2 (10-3/4 ounce) cans tomato soup, undiluted
1 teaspoon onion salt
2 cups (8 ounces) shredded cheddar cheese
8 hamburger buns, split
8 slices cheddar cheese
In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in soup and onion salt and heat through. Stir in shredded cheddar cheese until melted.
Spoon beef mixture evenly onto bottom half of each of eight buns. Cut cheese slices with Halloween cookie cutters and place cut-outs on top of beef mixture. Serve with bun tops on the side. Makes 8 servings.
CHOCOLATE PEANUT KRISPY TREATS
3 cups miniature marshmallows
3 tablespoons water
2 tablespoons honey
1 (6-ounce) package semisweet chocolate chips (1 cup)
1/2 cup peanut butter
3 cups Rice Krispies
1/2 to 1 cup peanuts, crushed
1/3 cup yellow, orange and brown-colored Peanut M&M’s (for decoration)
Lightly grease a 9- or 11-inch baking dish or pan.
In a large saucepan, combine marshmallows, water and honey. Cook over medium heat, stirring constantly with a wooden spoon, until mixture begins to boil. Immediately remove from heat.
Add chocolate chips and peanut butter. Stir until smooth. Immediately stir in cereal and peanuts until cereal is well coated. Spread mixture evenly in baking dish and press lightly.
Place decorative peanut M&M’s on top of chocolate mixture. Refrigerate for 45 minutes or until firm. Cut into squares or bars and store in an airtight container in the refrigerator.
