My Leader Yummy – Pizza Loaf, Apple Coleslaw

Pizza has long been a favorite with kids and adults alike, but have you ever tried a pizza loaf? The dish has many of the same ingredients you’d find in a regular pizza, and like any other pizza, you can customize the ingredients to suit your taste.

This Pizza Loaf recipe makes a tasty and quick meal. It’s even better if you pair it with a batch of this crunchy APPLE COLESLAW. The tangy, lemon-honey sweetness of the slaw brings out the flavorful Italian spices in the Pizza Loaf.

It’s a dinner just about everyone will love!

PIZZA LOAF

1 pound ground beef

1 pouch thinly sliced pepperoni (about 20 slices)

1/2 cup chopped onion

1/2 cup chopped green pepper

1 cup Italian or plain tomato sauce

1 (4-ounce) can mushroom stems and pieces, drained

1 teaspoon paprika

1/2 teaspoon garlic salt

1/2 teaspoon dried oregano

1/8 teaspoon black pepper

1 (6.5-ounce) package pizza crust mix

1 cup shredded mozzarella cheese, divided

3/4 cup shredded Cheddar cheese

In a medium-size skillet, cook the beef, onion and green pepper over medium heat until the meat is no longer pink; drain. Stir in the tomato sauce, mushrooms and all the spices. Set aside.

Oil a 15-by-12-inch baking sheet. Make pizza dough according to package directions and let rise 5-10 minutes. Then, press pizza dough onto baking sheet. Spoon meat mixture down center of rectangle and top evenly with sliced pepperoni. Sprinkle 3/4 of mozzarella cheese over meat and save 1/4 of it for topping. Sprinkle all the Cheddar cheese over mozzarella.

On each long side of the dough, cut 1-inch wide strips about 2-1/2 inches into the center of the dough. Then, starting at one end, fold alternating strips at an angle across filling. Pinch ends to seal.

Bake at 350 degrees for about 10 minutes and then sprinkle remaining mozzarella cheese down center and return to oven for another 10 minutes or until crust is golden brown. Cut into slices. Makes 6-8 servings.

APPLE COLESLAW

2 cups coleslaw mix

1 unpeeled tart apple, chopped

1/2 cup chopped celery

1/2 cup chopped green pepper

1/4 cup vegetable or grapeseed oil

2 tablespoons freshly squeezed lemon juice

2 tablespoons honey

1 teaspoon celery seed, optional

In a medium-size bowl, combine the coleslaw mix, apple, celery and green pepper.

In a small bowl, whisk together remaining ingredients. Pour over coleslaw and toss to coat.

Refrigerate until ready to use. Makes 4-6 servings.
