mini smokey puffs

As 2018 draws to a close, we look forward to the beginning of the brand new year. We never know what the next 365 days will hold, but there’s always a feeling of hope that it will offer prospects of good health and happiness.

For some, resolutions for new accomplishments are a priority. While many are made, chances are only a few will be completed. If you enjoy get-togethers with friends and family and you’re determined to find new appetizers to please the crowd, let me suggest these delicious puffs. They don’t take long to prepare, and your guests will be asking for the recipe. This New Year’s Eve may be the perfect time to try them at a party or perhaps to begin your first New Year’s Day dinner for 2019. Happy New Year!

MINI SMOKY PUFFS

4-5 ounces thin-sliced, Mesquite-smoked turkey or ham, finely chopped

2 tablespoons finely chopped green onion

1 cup shredded Swiss or cheddar cheese

1 egg

1 tablespoon snipped fresh parsley

1 1/2 teaspoons Dijon mustard

1/8 teaspoon ground black pepper

1 package (8-ounces) refrigerated crescent rolls

Preheat oven to 350 degrees.

Lightly spray mini-muffin pan with cooking spray.

In a small bowl, mix together finely chopped turkey or ham and green onions. Add cheese, egg, parsley, mustard and black pepper and mix well.

Unroll crescent dough and press into one large rectangle. Cut dough into 24 squares with a pizza cutter. Press one square of dough into each muffin cup.

Using small scoop or teaspoon, fill each muffin cup with prepared mixture. Bake 12-14 minutes or until puffs are light golden brown. Remove from pan; serve immediately.

Makes 24 appetizers

Note: If any puffs are left, these are easily microwavable once they’ve been refrigerated.
