Looking for a change of pace from your typical pork roasts and pork chops, yet something still delicious and easy to make? Well, this recipe for Honey Pork and Peppers will please both you and your family.

Summer gardens are now producing red and green sweet peppers, and this recipe is a great way to use them. Even if you don’t grow your own, you’ll find a large variety available at your favorite produce stand or grocer.

The combination of pork, onions and peppers seasoned with soy sauce makes a perfect Asian dish when served over Chinese noodles or hot, cooked rice. I like to add sliced carrots to mine, which not only adds color but also provides another vegetable for a great one-dish meal.

HONEY PORK AND PEPPERS

1 1/2 pounds boneless pork, cut into 1-inch cubes

2 tablespoons vegetable oil

1 (.87-ounce) envelope brown gravy mix

1 cup water

1/4 cup honey

3 tablespoons soy sauce

2 tablespoons red wine vinegar

1/2 teaspoon ground ginger

1/8 teaspoon garlic powder

1 medium onion, cut into wedges

1 medium sweet red pepper, cut into 1-inch pieces

1 medium green pepper, cut into 1-inch pieces

Chinese noodles OR hot, cooked rice

In a large skillet over medium heat, cook pork in oil until browned, about 15 minutes.

In a bowl, combine gravy mix, water, honey, soy sauce, vinegar, ginger and garlic powder; add to the pork. Cover and simmer for 20 minutes, stirring occasionally.

Add onion and pepper; cook 5-10 minutes longer. Serve over Chinese noodles or rice. Serves 4-6.

MOUSE’S TREASURE FRUIT SALAD

Lettuce

Canned pear halves

Red string licorice

Raisins

Whole almonds

Red cinnamon candies

Shredded cheddar or Velveeta cheese

For each salad, line half a salad plate with lettuce. Place one pear half, cut side down on lettuce.

Place 6-inch piece of red licorice at wide end of pear, forming mouse’s tail. Insert two or three 1-inch pieces of licorice on each side of narrow end of pear for whiskers.

Position two raisins on narrow end of pear for eyes and two almonds above raisins for ears. Insert one red cinnamon candy at tip of narrow end of pear for nose. Place several tablespoons of shredded cheddar or Velveeta cheese on plate by nose.
