Honey-Garlic Glazed Corned Beef, Oven-Roasted Potatoes

With St. Patrick’s Day, comes many traditions, from getting pinched if you’re not wearing green to getting your potatoes planted in the garden if you want a bumper crop. Another tradition, of course, is eating corned beef and cabbage on the holiday.

If you’re a little tired of the traditional boiled corned beef, you might want to try this recipe for Honey-Garlic Glazed Corned Beef. It’s great served with these Oven-Roasted Potatoes. Together, the two dishes offer a delicious change to your St. Patrick’s Day dinner. If you’re planning a meal for a crowd and trying to decide how much corned beef to buy, keep in mind you’ll see your corned beef brisket shrink considerably when baking or boiling.

HONEY-GARLIC GLAZED CORNED BEEF

1 (3-pound) corned beef brisket

GLAZE:

2/3 cup honey

6 cloves garlic, minced

1 tablespoon plus 1/2 teaspoon Balsamic vinegar

1/2 teaspoon Kosher salt

1/2 teaspoon black pepper

1/4 teaspoon ginger

Preheat oven to 350 degrees. Remove brisket from package; drain liquid and place in a 9-by-13-inch baking pan. Fully cover meat with water. Cover the pan tightly. Bake about 2 1/2 hours or until fork-tender. Drain water and set meat aside.

Raise oven temperature to 400 degrees.

Meanwhile, prepare glaze by combining all ingredients and whisking to mix. Pour glaze over meat, covering it fully and allowing to drip down sides.

Return glazed meat, uncovered, to the oven. Bake for 15 minutes and remove from oven and baste again by spooning sauce back over meat. Bake an additional 5 minutes until caramelized and glazed. Serves 6.

OVEN-ROASTED POTATOES

2 pounds of potatoes, peeled or unpeeled

1 envelope dry onion soup mix

1/3 cup olive oil

1/2 teaspoon black pepper

Wash potatoes, peel if desired and cut into medium-size chunks. In a large plastic Ziploc bag, add all ingredients and shake until potatoes are evenly coated.

Pour coated potatoes in one-layer into a greased 9-by-13-inch baking pan. Bake, uncovered, at 425 degrees, stirring twice, for 40 minutes or until golden brown. Serves 8.
