Now that summertime heat has finally arrived, most of us tend to look for recipes that are quick and easy to prepare. Grilling is one way to put a tasty, summer meal on the supper table, but after awhile you can get tired of smoked or grilled dinners.

Most cooks wouldn’t think of baking their main dish on the Fourth of July, and after having a big, lunchtime barbecue with all the trimmings at our daughter’s to celebrate the holiday this year, I looked for something lighter to fix for supper later in the day. This recipe for Garlic Shrimp was the perfect solution.

I’d been saving the recipe for more than a year, never having a chance to use it, but that evening I decided it was a good time to give it a try. I’ve been a shrimp lover from the first time I tasted it, whether breaded and fried, prepared in egg rolls, tossed in salads or combined with rice or pasta.

Since the Garlic Shrimp recipe called for the shrimp to be baked, I was a little hesitant to try it, especially on a hot summer afternoon. But the baking time was only 7 to 10 minutes, so I thought it probably wouldn’t heat up the kitchen too much. And it didn’t.

I fixed a baked potato and salad to go with it, providing a light supper after a big holiday meal at noon.

GARLIC SHRIMP

1 pound raw, medium to large shrimp, peeled, with tails on

1 stick (1/2 cup) butter, cut into small pieces

1 teaspoon sea salt

1 tablespoon fresh garlic, minced, or 1 teaspoon dried, minced garlic

1/4 to 1 teaspoon garlic powder (amount according to your own preference)

2 tablespoons fresh parsley or 1 teaspoon dried parsley

Juice from one whole lemon

Preheat oven to 375 degrees. Place the shrimp in a single layer in a large iron (or ovenproof) skillet. Divide the butter pieces evenly among the shrimp.

In a small bowl, combine the salt, garlic and parsley and mix well. Sprinkle evenly over the shrimp. Squeeze the lemon juice over the shrimp and bake until shrimp are pink and everything is bubbling, about 7 to 10 minutes. Serve with the delicious juices. Serves 4.
