Chocolate Chip-Oatmeal-Rice Krispies Cookies

If you're looking for a treat to satisfy a lot of different cravings, Leader food columnist Kathleen Brotherton recommends these Chocolate Chip-Oatmeal-Rice Krispies Cookies.

Say one family member loves chocolate chip cookies, another loves oatmeal cookies and yet another likes the crunchiness of Rice Krispies Treats. Do you need to make three batches of cookies to satisfy everyone? Nope, that’s not necessary, thanks to this recipe, which can satisfy all those cravings with one cookie.

Plus, these cookies are easy to make, so you can ask your kids to help bake them, giving them something fun to do while they’re stuck indoors because of the coronavirus pandemic. Not only will they take pride in the fact they helped make them but also they’ll love the taste.

You probably will have most of the ingredients on hand, so you won’t have to trek to the store either. Also, if you want to stock up on these delicious cookies, it’s easy to double the ingredients, and the results are just as mouth-watering good!

CHOCOLATE CHIP-OATMEAL-RICE KRISPIES COOKIES

1 cup white sugar

1 cup brown sugar

1 cup shortening

2 eggs

1 teaspoon vanilla

1 teaspoon salt

1 1/2 cups flour

1 teaspoon baking soda

1 1/2 cups oatmeal (quick is best)

1 cup Rice Krispies

1 1/2 cups chocolate chips

1/4 cup chopped nuts

Preheat oven to 350 degrees. Blend first five ingredients together. Sift next 3 ingredients together and then add to sugar mixture.

Add oatmeal, then Rice Krispies and blend together. Add chocolate chips and nuts last.

Drop by tablespoonsful on a cookie sheet about 2 inches apart, giving them room to spread as they bake without running into one another. Bake at 350 for 10-12 minutes.
