After all the wonderful holiday meals, we often begin looking for something lighter to eat at mealtimes. But, we still want something with substance that will stick to the ribs since we’re into the New Year, accompanied by some of winter’s coldest temperatures.
And, there’s nothing like hot soup to fill that need. Some soups tend to be thinner, like chicken noodle or vegetable beef, which are fine, but they can leave you hungry again not long after finishing your meal. Fortunately, there are a number of thicker, richer soups that are not only delicious, but filling as well.
The following recipe is one example, and if you include some cheesy bread alongside it, this soup will hold you over for hours until the next meal.
There’s nothing like this thick, rich soup to warm you up after working outside or playing in freezing temperatures and it’s so quick and easy to prepare.
BEEF STROGANOFF SOUP
2 cups water
3 ounces (1 3/4 cups) uncooked medium egg noodles
1 pound lean ground beef
1/3 cup chopped onions
2 garlic cloves, minced
Salt and pepper to taste
1 (12-ounce) jar beef gravy OR 2 regular packages of dry, brown gravy mix mixed with 2 cups water and made into gravy
2 small cans of sliced mushrooms
1/2 cup dairy sour cream
Fresh or dried parsley, optional
Bring water to a boil in medium saucepan, add noodles; cook 6 to 8 minutes or until tender. Do not drain.
Meanwhile, in medium skillet, cook ground beef until no longer pink, add onions and minced garlic and continue to cook on low heat until ground beef is browned and onions and garlic are tender. Drain any liquid that remains.
Add cooked ground beef, gravy, mushrooms and sour cream to noodles in saucepan and cook until thoroughly heated. Add salt and pepper to taste.
If desired, sprinkle with chopped fresh parsley or a dusting of dried parsley. Makes 4 servings.
