Most families have favorite main dishes they never seem to tire of, that is if they’re not served too frequently. Sometimes, though, it’s fun to put a new spin on an old favorite, like this Beef Stroganoff Casserole.
The recipe calls for many of the same ingredients used in the stove-top version. However this dish offers just enough of a twist to make a difference in the old standby, especially since it’s baked.
Served with a side salad and glass of fresh lemonade, it’s a meal you and your family is sure to enjoy.
BAKED STROGANOFF CASSEROLE
1 (12-ounce) package medium egg noodles
1 1/2 pounds lean ground beef
1 medium onion, chopped
1 medium green bell pepper, seeded, chopped
1 cup chopped celery
1 small can beef broth
1 (6-ounce) can tomato paste
1 1/2 cups sliced fresh mushrooms
1/2 teaspoon dried oregano
1 teaspoon garlic salt
1/2 teaspoon salt
1 (8-ounce) carton sour cream
1 (16-ounce) container small curd cottage cheese
1 (8-ounce) package shredded mozzarella cheese
1 cup shredded cheddar cheese
Cook noodles according to package directions, drain and keep warm.
In a large skillet, cook ground beef until it crumbles and is no longer pink; drain well. Stir in chopped onions, chopped bell pepper and celery. Cover and cook over medium-high heat for 15 minutes, stirring occasionally, so it doesn’t stick to the bottom of the pan.
Stir in the beef broth, tomato paste, mushrooms, oregano, garlic salt and salt and set aside.
In a large bowl, combine sour cream and cottage cheese and mix well. Stir in cooked noodles and toss to gently coat.
Spread half this sour cream-noodle mixture into a buttered 9-by-13-inch baking dish. Top with half of the meat-vegetable mixture, half of the mozzarella cheese and half of the cheddar cheese. Repeat layers of remaining noodles and meat-vegetable mixture.
Cover and bake at 350 degrees for about 25 minutes.
Remove from oven and sprinkle with remaining cheeses. Bake uncovered for another 5 minutes.
Serve hot. Makes 8-10 servings.
