An apple a day keeps the doctor away, as the old saying goes. If there’s any truth to the adage, what tastier way is there to stay healthy?
With so many varieties out there – some sweet, some tart, some crisp and crunchy – there’s an apple to suit every taste and preference. And, there are so many ways to enjoy the fruit.
Of course, you can just grab one and eat it for a tasty snack. But, there are also candied apples; apple butter and applesauce; apple dumplings and pie; apple cakes; and my favorite, Apple Crisp Pizza – a delicious combination of apple crisp and apple pie.
APPLE CRISP-PIZZA
Pastry for one single pie crust
2/3 cup sugar
3 tablespoons flour
1 teaspoon ground cinnamon
4 medium baking apples, peeled and cut into 1/4 to 1/2-inch slices
TOPPING:
1/2 cup flour
1/3 cup packed brown sugar
1/3 cup rolled oats
1 teaspoon ground cinnamon
1/4 cup butter, softened
1/4 to 1/2 cup caramel ice cream topping
Vanilla ice cream, optional
Roll pastry to fit a 12-inch pizza pan; flute the edges.
Then, combine the sugar, flour, and cinnamon in a bowl. Add apples and toss.
Arrange the apples in a single layer in a circular pattern to completely cover the pastry.
For the topping, combine the first five topping ingredients and sprinkle evenly over apples.
Bake at 350 degrees for 35 minutes or until apples are tender. Remove from the oven and immediately drizzle caramel topping over all. Serve warm. If desired, top with a scoop of vanilla ice cream. Makes 12 slices.
