Autumn officially begins this month and despite the above normal temperatures of recent weeks, we know, it’s only a matter of time when Jack Frost will make his first appearance and days will be chilly and often rainy this time of year. There’s nothing like a hot bowl of soup or chowder to warm you inside and out for lunch or dinner. This recipe for Loaded Seafood Chowder will do just that.
If yardwork is keeping you busy right now, but you’d still like to make a special treat for the family for a snack. This three-ingredient Butterscotch Crunchies cookie recipe is both fast and delicious.
Loaded Seafood Chowder (Slow cooker)
1/2 cup chopped onions
2 teaspoons butter
2 cans (12 ounces each) evaporated milk
2 medium potatoes, peeled, diced in small chunks
2 cans (10 3/4 ounces each) cream of chicken soup
1 can (14 3/4 ounces) cream-style corn
1 can (10.5 ounces) cream of celery soup
1 teaspoon seafood seasoning
1/2 teaspoon garlic powder
1 package frozen (1-pound) cooked, peeled and deveined small shrimp, thawed
1 (3 ounces) package of cream cheese, cut in small pieces
1 can (6.5 ounces) minced clams
1 can (4 ounces) white crabmeat
1 cup frozen artificial crabmeat, thawed and chopped
4 strips of bacon, cooked and crumbled
In a small skillet, sauté onions in butter, until tender.
In a 5-quart slow cooker, combine the onion mixture, milk, soups, creamed corn, seafood seasoning, garlic powder, minced clams, white crabmeat, artificial crabmeat and diced potatoes. Cover and cook on low for 3 hours.
Stir in shrimp and cream cheese. Cook 30 minutes longer or until shrimp are heated through and cheese is melted. Stir to blend. Garnish with bacon. Makes 12 servings.
Butterscotch Crunchies
1 (12 ounce) package of butterscotch morsels
1 3/4 cups Chow Mein noodles
1 cup chopped pecans
Melt butterscotch morsels in heavy pan over very low flame, stirring gently. Stir in noodles and pecans, just until blended and coated.
Drop mixture by teaspoonfuls onto waxed paper.
Refrigerate for 30 minutes or until set. Makes about 1 1/2 dozen cookies
