My Leader Yummy: Impossible Ham and Swiss Pie and Seafood Pasta Salad

During busy summer months, one-dish meals are often on the menu for supper. A refreshing salad to accompany it is always a plus. This Impossible Ham and Swiss Pie is a handy, filling recipe and the Seafood Pasta Salad goes great with it.

Impossible Ham and Swiss Pie

2 cups cut-up fully cooked smoked ham

1 cup (about 4 ounces) shredded Swiss cheese

1/3 cup sliced green onions or chopped onion

2 cups milk

4 eggs

1 cup baking mix such as Bisquick

1/4 teaspoon salt (optional)

1/8 teaspoon black pepper

Preheat oven to 400 degrees.

Grease a glass or ceramic (10x1 1/2 inches) pie plate.

Sprinkle ham, cheese and onions in pie plate.

Mix remaining ingredients in a medium-size mixing bowl and using a hand mixer, mix all ingredients until well blended.

Pour over ham and cheese mixture and bake for 30 to 35 minutes or until a knife inserted in center of pie comes out clean.

Cool for 5 minutes and cut into serving size pieces.

Makes 6 to 8 servings.

Seafood Pasta Salad

1/2 cup mayonnaise or salad dressing

1/4 cup Italian dressing (your favorite brand)

1/4 cup grated Parmesan cheese

2 cups (8 ounces) corkscrew noodles (plain or veggie-colored), cooked and drained

1 1/2-cups (8 ounces) chopped imitation crabmeat

1 cup broccoli florets, partially cooked

1/2 cup chopped green pepper

1/2 cup chopped tomato

1/4 cup green onion slices

Combine dressings and cheese; mix well. Lightly stir into cooled cooked noodles.

Add remaining ingredients; mix lightly.

Cover and chill in refrigerator until ready to serve.

Makes 4 big servings.
