Grilled Shitake Mushrooms

1 1/2 pound shitake mushrooms

1 tablespoon olive oil

2 tablespoons soy sauce

1 tablespoon fresh lemon juice

1 tablespoon rice vinegar

2 tablespoons chopped tarragon

Salt and pepper

Mix 2 tablespoons olive oil with soy sauce, lemon juice, vinegar and tarragon, and season with salt and pepper. Brush mushrooms with soy vinaigrette. Season with salt and pepper. Grill over moderate heat, turning once, for 6 minutes. Put in bowl and add 4 tablespoons of soy vinaigrette and toss.
