Gingersnaps

 1 1/2 cup shortening

2 1/2 cups sugar, divided

2 eggs

1/2 cup molasses

4 cups flour

2 teaspoons baking soda

2 teaspoons cinnamon

2 teaspoons cloves

2 Tablespoons ginger

 Mix together shortening and two cups of sugar. Add eggs and molasses. In separate bowl mix together flour, soda, and spices; add to shortening mixture and mix well. Roll into 1-inch balls and roll in remaining half cup of sugar. 

Put on greased cookie baking sheets and bake at 375 degrees for 15-18 minutes. Makes about 60 gingersnaps.
