Winter is always a good time to serve chicken soup, but if you’re looking for something a little heartier than chicken noodle soup, then this recipe for Chicken Chowder might be just what you’re looking for.

Chicken Chowder
1/4 cup butter (half of a stick)
1/3 cup finely chopped onion (1 small onion)
1/2 cup finely diced, peeled carrot (1 medium carrot)
1/3 cup finely sliced celery (1 small stalk)
1/4 cup finely diced green bell pepper (half of a small pepper)
1/4 cup flour
1-2 teaspoons salt
1 teaspoon black pepper
1 cup boiling water
1 (28 ounce) can diced tomatoes
1 apple, peeled and chopped
1 teaspoon thyme
1/4 cup chopped fresh parsley (or 1 tablespoon parsley flakes)
3 cups milk
1 cup chopped or diced cooked chicken
Melt the butter in a stock pot over medium high heat.
Add the onion, carrot, celery and green pepper and cook until tender, two to three minutes.
Sprinkle with flour, salt and pepper, stirring gently to combine.
Gradually mix in boiling water, one-fourth at a time, stirring until smooth.
Stir in tomatoes and reduce heat to medium low and add the apple, thyme and parsley.
Simmer for 30 minutes.
Add the milk and chicken and cook until heated through, another 5-10 minutes.
Makes 4-6 large servings.
Grilled Rocky Mountain Philly Steak Sandwiches
1 (14 ounce) package of frozen sirloin Philly steaks, thawed
3 tablespoons, olive oil, divided
8 slices sourdough bread
4 teaspoons coarse mustard
4 teaspoons ketchup
4 slices Monterey Jack or Colby Jack cheese
In a large skillet over medium heat, brown steaks on both sides in one tablespoon oil.
Spread four slices of bread with mustard; spread remaining bread with ketchup.
Arrange steak slices, divided evenly for four sandwiches on mustard-covered bread slices; top with cheese.
Top with ketchup-covered slices of bread.
Brush remaining olive oil on outsides of sandwiches.
Over medium heat, brown sandwiches on both sides, until golden and cheese is melted.
Makes 4 servings.
Optional: Add lettuce, sliced tomatoes, sliced onions or pickle slices.
