The year 2023 is almost behind us, which means we soon will be celebrating the New Year with family and friends. No New Year’s party is complete without snacks to go with our favorite drinks.
Here are two tasty recipes your guests are sure to love – Shrimp Puffs and Pineapple Cheese Ball. Enjoy and happy New Year everyone!
SHRIMP PUFFS
Cream Puffs:
1/2 cup hot water
1/4 cup butter or margarine
1/2 cup all-purpose flour
1/4 teaspoon salt
2 eggs
Filling:
1/3 cup toasted slivered almonds
1/4 cup shredded Cheddar cheese
1/3 cup dairy sour cream
1/4 cup finely chopped celery
1 tablespoon finely chopped green onion
1/2 teaspoon Dijon mustard,
1 teaspoon sugar
1 (4 1/2-ounce) can tiny shrimp, drained
Dash of pepper
Heat oven to 425 degrees. In medium saucepan, heat water and butter or margarine to boiling.
Lightly spoon flour into measuring cup; level off. Stir in flour and salt. Cook over medium heat, stirring vigorously, until mixture leaves sides of pan in smooth compact ball, about 2 minutes. Remove from heat.
Add eggs, one at a time, beating vigorously after each addition until mixture is smooth and glossy. Do not under beat.
Drop by teaspoonfuls onto ungreased cookie sheets. Bake for 13 to 17 minutes or until golden brown and crisp. Cool completely.
In a small bowl, combine all filling ingredients; refrigerate or use immediately.
Split cream puffs; fill with shrimp filling.
Refrigerate leftovers. Makes 20 puffs.
PINEAPPLE CHEESE BALL
1/4 cup chopped green pepper
1 tablespoon chopped onion
1 (8-ounce) can crushed pineapple, drained
1 (8-ounce) package cream cheese
1/4 cup shredded Parmesan cheese
1 teaspoon salt
1/2 cup chopped pecans
Plus 1/2-cup more chopped pecans to roll cheeseball in
Place chopped green pepper, onion and pineapple on paper towel to absorb liquid. Blend all ingredients well. Refrigerate and chill at least 1/2 hour.
Shape into ball. Roll in additional chopped pecans.
Serve with your favorite crackers or fresh cut-up vegetables.
