After a big Thanksgiving meal with turkey and all the trimmings, sometimes it’s nice to change up the menu the next day. If you’re lucky enough to have a few cups of turkey left over and want an alternative to turkey salad or soup, here are two Mexican recipes you might want to try.
The first is Turkey Cazuela, a casserole, and the second is Mucho Nachos, a main dish. They both are delicious and easy to make.
TURKEY CAZUELA
8 ounces uncooked linguine, broken in half
1 1/2 cups French fried onions, divided
2 cups cubed cooked turkey
1 (10 1/2-ounce) can condensed cream of chicken soup
1 (8-ounce) jar picante sauce or salsa
1/2 cup sour cream
1 cup (4 ounces) shredded cheddar cheese
Preheat oven to 350 degrees and grease a 2-quart baking dish. In the meantime, cook linguine according to package directions using shortest cooking time.
Layer linguine, 2/3 cup French fried onions and turkey in prepared baking dish. In a large bowl, combine soup, picante sauce or salsa and sour cream in a large bowl and pour over turkey.
Cover and bake 40 minutes or until hot and bubbling. Stir gently.
Sprinkle with cheese and the remaining 2/3 cup onions. Bake 5 minutes more or until onions are golden. Makes 4-6 servings.
Note: You may substitute 4 cups other cooked pasta instead of linguine. You also may use cooked chicken in this recipe instead of turkey.
MUCHO NACHOS
2 cups leftover turkey (or chicken), cut into bite-size pieces
1 (8-ounce can) whole kernel corn, drained
1 (8-ounce can) black beans, drained
1/2 cup salsa
1/2 cup mayonnaise
1 teaspoon dried red peppers, crushed
1 cup longhorn (or cheddar) cheese, shredded
3 cups tortilla chips
In a large bowl, combine turkey (or chicken), corn, beans, salsa, mayonnaise, dried red peppers and 3/4 cup of the cheese. Layer a baking dish with 2 cups of the chips, cover with the mixture from the bowl and top with remaining cheese and the other cup of chips.
Microwave on high for about 3 minutes or until hot and bubbly. Makes 5-6 servings.
