If you love seafood but think it’s too much trouble to fix and you’re rushed to make dinner, then this Sweet and Sour Shrimp one-pot meal recipe and this Seafood Salad recipe are the answer.
The Sweet and Sour Shrimp is an easy-to-make and tasty meal. If you’re looking for something a little lighter, this Seafood Salad is great on a bed of lettuce, or you can spread some on a bun to make a delicious sandwich. Either recipe will satisfy your seafood craving!
SWEET AND SOUR SHRIMP
2 cups uncooked instant rice
1 1/2 cups water
2 tablespoons lemon juice
1 tablespoon soy sauce
3 tablespoons apricot preserves
1 package (12 ounces) frozen cooked shrimp
1 package (16 ounces) frozen stir-fry vegetable mix (broccoli, carrots, onions, red peppers, celery, water chestnuts and mushrooms)
Salt and Pepper to taste
Place all ingredients in order given into a large, nonstick pot. Cook over medium-high heat, stirring occasionally, until liquid begins to bubble.
Reduce heat to lowest setting, cover, and cook for an additional 10 minutes. Serve. Makes 8 servings.
SEAFOOD SALAD
1 pound imitation crabmeat, chopped
1/4 cup chopped green onions
1 cup chopped celery
2 tablespoons mayonnaise
2 tablespoons plain yogurt
2 tablespoons tartar sauce
1 teaspoon sugar
4 ounces shredded cheddar cheese
1/4 teaspoon paprika
1 tablespoon lemon juice
Combine all ingredients and mix well. Serve as a salad on a bed of lettuce or place 1/2 cup on a hamburger bun or sliced croissant roll for a sandwich.
Makes about 4 cups for 8 1/2-cup servings.
