Now that the heat of summer has eased up and we’re getting some chilly autumn days, we're starting to think of those warm, comfort foods, like soups, chili and bisques. There’s nothing like a warm bowl of your favorite soup to take the chill off.
This Seafood Bisque recipe is not only tasty and warming, but also it doesn’t require a lot of time to make. Serve it with these Garlic Cheese Biscuits that taste like the ones served at Red Lobster for a delicious, satisfying meal.
SEAFOOD BISQUE
2 (10 3/4-ounce) cans condensed cream of mushroom soup, undiluted
1 (10 3/4-ounce) can condensed cream of celery soup, undiluted
2 2/3 cups milk
4 green onions, chopped
1/2 cup finely chopped celery
1 garlic clove, minced
1 teaspoon Worcestershire sauce
1/4 teaspoon seafood seasoning
1 1/2 pounds uncooked medium shrimp, peeled and deveined
8 ounces artificial crabmeat, chopped, or 1 (6-ounce) can crabmeat, drained, flaked and cartilage removed
1 small can sliced mushrooms, drained
3 tablespoons chicken broth or Madeira wine
1/2 teaspoon salt
1/2 teaspoon pepper
Minced fresh parsley (for garnish)
1. In a Dutch oven or soup kettle, combine the first eight ingredients; mix well and bring to a boil and carefully stir mixture, making sure it doesn’t stick to the bottom of the pan.
2. Reduce heat; add the shrimp, crab, mushrooms and simmer, uncovered, for about 10-12 minutes, again stirring often so mixture doesn’t stick to bottom of pan.
3. Stir in chicken broth or wine, salt and pepper; cook 2-3 minutes longer. Garnish with parsley when served. Makes about 2-1/2 quarts.
Note: You can use 1/4 teaspoon hot pepper sauce instead of the seafood seasoning if you prefer a spicier flavor.
GARLIC CHEESE BISCUITS
2 cups buttermilk baking mix
2/3 cup milk
3/4 cup shredded cheddar cheese
1/4 teaspoon garlic salt
1/4 cup butter, melted
1/4 teaspoon garlic powder
Preheat oven to 450 degrees.
In a medium bowl, combine baking mix, milk, cheese and garlic salt; stir until just moistened.
Drop tablespoonfuls of dough, 2-3 inches apart, onto greased baking sheet. Bake 10 to 12 minutes or until golden brown.
In a small bowl, combine melted butter and garlic powder; brush over warm biscuits. Makes about 10 biscuits.
